An upper caste man got married with the obc girl, then the offspring will belongs to which category.
Also,
An upper caste woman got married with the obc boy, then the offspring will belongs to which category.

The offspring will always take the caste of his father - irrespective of the situations given by you.

But people mostly get confused or wrongly guided that they can assume one which shall be beneficial to them.
That is wrong, the caste of father shall be that of his heirs

I disagree with the above the offspring has the right of choice. They can get the community certificate of his father or mother. But, while moving in the society the children can take a different stand.
