ad hoc additons made by ito

i am running a restaurant mostly cash purchases are made of milk, vegetables and fish etc.
the ito has made ad hoc addition of 3 lacs on account of cash purchases without vouchers
G.P is shown at 44% and N.P. @ 4.5%
please give some case references

On what grounds, the ITO, has passed the impugned order has to be gone through, before any advise is given
