First of all I don't know if this situation comes under Immoral Traffic.
A Man & Woman NOT Married have consensual s*x in a reputed hotel. Is it punishable under any law in India ? Can the hotel do something against it ?

Yes and No.
Depends on how the same is viewed. It would be immoral trafficking, if it is a public area. And public area as defined places of public religious worship, educational institutions, hostels, hospitals.

But in this case, the police would show that the lady was charging and produce some witness too. The matter would need to be fought on merits.
