Can my dad sell property or take a loan on a property which is in my mother's name which is her ancestral property without her signature by just possessing original property documents?

No, he cannot take a loan and only your mother is eligible for a loan on her property if required

Neither your father can sell nor can take loan on the property belongs to your mother ( mother is owner ) .It is your mother who has only right to sell the property or take the loan on it.
