The stamp paper may be required for an agreement which is in a uniform format.  Regarding blank cheques, it is your discretion, and as a precautionary measure provide blank cheques of inoperative account, and after one or two months, inform Bank on missing of cheque book.  The matter is sensitive and there should be mutual trust and you have to opt for that company which is reputed.  It all depends on your financial responsibilities and your chances of change over to another company for better opportunities after getting experience during the minimum service clause.

Vague information can not lead to form an opinion and oblige.

It is advisable to consult a local prudent lawyer with facts/document of the case of proper appreciation, guidance and proceeding.

Please try if a forwarding letter is possible while the blank stamp paper and the cheques are handed over. Else, try to create some  record/evidence that the blank things had been handed over so that you are not caught on the wrong foot if they are misused.
