I am an engineering post-graduate currently doing managerial role in a private sector organization. Recently I am interested in taking up law as applicable to businesses as a differentiator to my career. I would like to know what are the options available to mid-career professionals like me to pursue legal education/career.

You will have to LLB degree from the university.
After passing the exams you have to enroll as an adovcate to the state bar council.
After becoming an advocate u can apply for the civil judges post ( years expeerience must in karnataka) Asst., public prosecutor. You can become legal advisor to the banks and insurance companies.
You can also become legal manager in fiancial institutions etc., so many careers in this line.

Thanks, I got a really quick reply. I understand that a full-time degree is required for practicing law. Are there any part-time or distance education options that will be useful as a career option even if not allowed to appear in court to practice law.

The following law courses can be done through correspondence:

Annamalai University, Directorate of Distance Education, Annamalinagar 608002. Courses: Bachelor of Academic Laws (3yrs) and Bachelor of General Laws (2yrs).

University Of Jammu, Directorate of Distance Education, New Campus, Jammu 180006. Course: LLB (Academic) (2yrs).

Kakatitya University, School of Distance Learning & Continuing Education, Warangal 506009. Course: Bachelor of General Laws (2yrs).

University Of Kashmir, Deptt. of Distance Education, Hazratbal Srinagar 190006. Course: LLB (Academic) (2yrs).

Madurai Kamraj University, Directorate of Distance Education, Palkalainagar, Madurai 625021. Course: Bachelor of General Laws (2yrs).

But due to statutory requirements, these courses are not recognised by the Bar Council of India and you will not be able to practice in a court of law after doing these courses.

if u r really interested the the best option available right now is join the law WITH SPECIALISATION IN IPR course at IIT, IT WILL DEFINITELY give a boom to ur career.

since You are an Engineer, and already in Private Sector....here I am making an additon to Sachin's advice, u can also opt for correspondnce MBL course from National Law School, Bangalore...for this course u need not be a Law Grad.
