Sleepwalk as defense in a criminal behavior is an extremely difficult defense.  To prove that you were sleepwalking is very very hard. Even if are able to prove that you were sleepwalking...its not enough.  You will have to prove that your complex behavior was a result of sleepwalk...an almost impossible thing to prove in court in most cases.

You will need to show your past medical and mental health records verifying that you were diagnosed with a disorder which can cause sleepwalk..or you were taking a medicine which can cause sleepwalking as a side effect. 

In most cases, a sleepwalker do not indulge in a comple behavior but can walk on streets, buy things or do some simple other actions.  A sllepwalker can not go to specific person's home, enter her bedroom and rape her...that will be very very rare.
